Habib Troudi est le fondateur de l'un d'entre eux, le Panache Wood Fire Grill. Sculpté dans le bâtiment qui abritait L'Angolo Blue, un restaurant italien qui a fermé cette année, le Panache est basé sur un « concept simple », comme le dit Troudi, proposant aussi bien de fines pizzas à la napolitaine cuites au charbon de bois que des steaks, des fruits de mer et autres nouveautés de la cuisine américaine. Une fois terminé, l'établissement comprendra deux bars, dont l'un abritera le massif four de 4 tonnes et demi qui accueillera les pizzas et autres plats préparés dans des poêlons en fer forgé.
