Le restaurant Copperleaf est un véritable repère du nord-ouest américain où tout le monde se rassemble autour d’un repas préparé à base de produits de saison et inspiré par les recettes du terroir. L’équipe est dévouée et fidèle aux méthodes de l’établissement afin de vous proposer le meilleur à chaque saison. Le chef Mark Bodinet sélectionne personnellement les ingrédients au sein de petites fermes locales, mais aussi auprès de pêcheurs, de propriétaires de ranchs ou d’artisans. Il utilise également les produits de son propre jardin sur place pour la plupart des événements caritatifs qui sont organisés certains après-midis. Avant de passer à table, vous pourrez déguster un cocktail de saison ou un verre de Syrah au bar du restaurant. Le menu du salon y est disponible tous les jours. Service was outstanding!! Food was excellent except for strawberry dessert with pound cake: about three strawberries cut into smaller pieces. Would not reorder. Lemon dessert was very good.

We ate there twice flying in and out of Sea-Tac on bookended weekends. So dinner coming in and breakfast going out. The ambience of the hotel is amazing for being nearly across the street from airport. It is the airports best kept secret. A beautiful oasis with wood post and beam architecture. The Copperleaf Restaurant - a great gourmet restaurant, yet with approachable foods. All fresh and delicious. The scallop stew, the fresh croissants, homemade fruit spread, lovely baked chicken, everything great. Our waiter on Monday morning could not have been more accommodating, and entertaining. He moves fast, is efficient and he could work any 5 star restaurant. The ambience again, so great, fireplace too! You will not be dissappointed.

Interesting menu with a large variety. We had the small plates and shared. The goat cheese tortellini were exceptional. The only down side was that the bar was out of Bombay gin and the waiter did not know enough about it to recommend something similar. Probably should have had him ask the bartender. Also $21.00 for a double of Angel's Envy Bourbon is a bit much. We had breakfast there as well. The lox and bagel was an incredible value at $15 and delicious. Our breakfast waiter was superb.

Booked for a 6 person adult Mother's Day event. We were all very disappointed by the ambiance and setting. Pictures showed a light bright space and we were shocked to find it in the lower level of the hotel, low ceilings and dark. The staff were very nice and the food was good, but honestly for $90.00 pp I wish I had booked one of the many other options available in Seattle.
