Le Cured est le premier et très attendu resto-bar du chef Steve McHugh. Il a été ouvert en décembre 2013, dans le bâtiment centenaire qui appartenait autrefois au siège du président de la célèbre brasserie Pearl Brewing Company. Ce chef expérimenté a passé dix ans à la Nouvelle-Orléans comme chef de cuisine pour le chef John Besh, suivi de deux ans au Lüke à San Antonio. Pourtant, sa plus grande réussite a été de battre le cancer. Après un tel succès dans sa vie, McHugh a choisi de créer le Cured (qui signifie « guéri »), en lui donnant un nom évoquant son combat réussi et les viandes artisanales fumées suspendues. La pureté des ingrédients et une méthodologie pratique ont amélioré son processus de guérison. Parmi le menu saisonnier concocté de A à Z figurent des patates douces agnolotti à la sauge et au bourbon/cassonade, ainsi que du porc bio cuit lentement, accompagné d'andouille fumée et de gombo. McHugh a trouvé le moyen de mettre en œuvre un « don gastronomique » en reversant 1 USD par plateau de charcuterie à un organisme de bienfaisance différent chaque trimestre.
