For generations, molinos have served as celebrations of the most honored culinary tradition in our Mexican culture — nixtamal! Translated from the native Nahuatl, nixtamal is the production of corn dough, or masa. The molineros’ millenary artisan techniques in the nixtamal process are the foundation for creating all great antojitos — the craveable snacks sold by street vendors all across Mexico. Our mission is to preserve and promote the beautiful, bio diverse treasure that is heirloom, non-GMO Mexican corn. We work directly with local, small-scale farmers to ensure our grains are sourced in an ethical and sustainable way. Our authentic, fresh, small-batch recipes allow you to experience your favorite Mexican dishes the way they were meant to be — the same way we enjoyed them as kids!
