1794 The Whiskey Rebellion is a down to earth local eatery & whiskey bar based on Carlisle's unique history. Our menus contain food and drinks rich in American tradition.

Our food is simple and honest, created from ingredients sourced (locally when possible) from sustainable American farmers.

Our bar is based on the "farm to shaker" concept. Using the highest quality ingredients to pair with our small batch and locally distilled spirits & extensive whiskey list.

COVID-19 Precautions:
Our primary concern is the health and safety of our guests and staff. You will see that we are taking all precautions to ensure that you are safe while dining with us. All of our tables are 6 feet apart to allow for social distancing. At the bar we have glass dividers that give you a protective barrier from guests next to you. All of our servers, chefs and bartenders wear masks and gloves. Our employees wash hands and change gloves frequently. We are constantly sanitizing all touch points.

I am giving this such low ratings because this is our 3rd time eating here and the service just never gets any better. It was exceptionally bad this weekend. It was busy and I booked a last minute Open Table seat (but it was available soooo), but the server seemed really put out that he had to serve us. We are a friendly bunch, but perhaps because the kitchen was so slow, he was getting flack from other diners. Considering the cost of the food, the quality of the food and the level of service we've received every time, we won't be back.

Great food and service on a busy Saturday evening. I was a bit disappointed as I knew what I wanted to order but they ran out of it before we arrived. I had the prime rib instead and am happy to report it was wonderful!

Perfect. Except for the noise level. Dessert was a berry cobbler. Superb. Great coffee too. Waitress was special. Helped us celebrate our 25 anniversary

We’ve dined here at least 3 times in the last 3 yrs, so across a long span of time. Always had a nice meal and good service. Good menu options, our table got prime rib, buffalo burgers and chicken dinners, all were great. Will be back when in town again.

The food and our server were great! Seriously great. What wasn’t so great? Some member of the staff threw icy water onto the public sidewalk in front of the restaurant. Granted that may not have created an issue for the majority of diners, but my husband has Parkinson’s disease and his ambulation is suspect at times. Guess what occurred when I went to check in for our reservation? HE FELL! His trousers and jacket were soaked. Virginia, a manager, gave me her business was card and told me to call her if he was injured. Seriously. He scraped his leg and still has a nasty scab that hasn’t completely healed. Who throws anything on a public sidewalk???

Good food, great drink selection, priced right. We opted to sit inside on a Tuesday evening. Next time, will opt for outdoor seating - livelier crowd there. Heaters and covered area - to watch the Carlisle sidewalks - for some local entertainment. If inside, table or booth? Ask for a cozy booth! The food: Caesar salads - crisp lettuce, tasty dressing. Loved the stroganoff and the medallions, tasty fries with amazing dipping sauce for crabcakes. Croutons - pretty standard and a bit stale. Crabcakes "nothing to write home about." The service: Adequate. Food arrived hot. And service was efficient. May visit again - nice to have lots of options in Carlisle. When we left, the bar area was hopping - on a Tuesday night - that's terrific!

Our server was very knowledgeable about the whiskeys and bourbons. Her enthusiasm about the menu made us want to order one of everything!
