This was our first visit to Water Grill and it was a good dining experience. It’s a beautiful place with comfortable booths, indoor-outdoor seating, nice decor. David was our server and he was engaging, charming, and put our dining comfort on a pedestal. He was great. The food at Water Grill is good but with a little tweaking could be great. For a starter, my wife and I shared the “spicy” lobster roll (a sushi dish). The presentation was exquisite…the texture of these individual rolls was sweet. Slight crunch. Succulent. It was not flavorful, let alone spicy, as advertised. We added wasabi paste to kick it up. The kitchen should get more aggressive. For entrees, my wife had the seared sea scallops with a brown butter sauce. Delicious. Not hot enough, temperature-wire. I went to work on the cioppino. I’m from Maryland, so I know how to wrestle with shellfish, especially hard-shelled crabs. It’s ridiculous that Water Grill makes its diners do this but I had fun. Clams, mussels, shrimp, crab, squid, salmon, swordfish in a full-flavored seafood stock broth. It was worth the effort they put me through. The large, day-old baguette is perfect for dipping. I cleared it out. (Spanish chorizo pieces would have been icing on the cake.) Water Grill is good and so close to great with some marginal changes.

Considering how enjoyable our meal was, it surprised me that I hadn't heard much about this restaurant. Definitely one of the top seafood restaurants in Denver.

This place was recommended by hotel staff. Went there for our anniversary. I checked the anniversary box when reserving our table. When we arrived, the table was sprinkled with rose petals with a 'happy anniversary ' card that was signed by the staff. Cocktails were tasty and inventive. Oysters (east and west coast choices available) and calamari appetizers were delicious. Black cod was flaky and flavourful. The sauce with the cioppino was to die for. Manager provided a free cookie like dessert with ice cream that was very nice. Good scotch selection rounded out the meal. Our server was attentive and knowledgeable, saw to our every need, and made great wine and food suggestions. So impressed with this place, can't wait to go back.

We love this restaurant. It’s one of our favorites. But our server this time was just terrible. She didn’t take our order for almost half an hour, didn’t clear our plates or check in with us hardly at all until her manager got on her. I was so disappointed as the service at this particular location is usually top-notch.
