We put all our heart and soul into a creative and unique experience. Our Omakase is a pre-fixed menu based on raw fish and shellfish. All ingredients come from Japan, prepared with Japanese techniques and elements. Our Omakase is a fine dining, intimate experience, prepared in front of our guests to highlight the integrity of our dishes.
CANCELLATIONS AND MODIFICATIONS are allowed 72 hours in advance. Less than 72 hours will be charged for the full price of Omakase per guest plus tax.

This place has the BEST omakase sushi in Orange County which is rare and hard to find. Take it from someone who regularly eats omakase around the world and is a regular of masa NYC. Hoping Michelin will come around in their future!! Chef Jordan and his team was the best, and the food is not only beautiful and carefully crafted but EXTRAORDINARY. You must try it yourself!!!

What an incredible experience we had at Rebel Omakase. The service was fabulous and the food was absolutely incredible. Every dish was so well thought out, flavorful and fresh. The staff was accommodating and knowledgeable. We cannot wait to go back again!

Ingredients - Quality: outstanding (especially uni and crab and most fish) - Choice: some rare finds of fish, big ups Food - Creativity: Japanese fusion - Presentation: superb - Portion: overall small, sushi particularly tiny (about 1/3 avg. sushi size, and they give you weird looks for asking for bigger portion rice). - Tastiness (subjectively): 2/3 of dishes are good to great, 1/3 meh to no. - Tastiness (objectively): tried too hard on fusion for some dishes, hence dropped the ball on taste. Sushi dishes taste fabulous tho. Service - Attentiveness: flawless. My tea cup was never less than half full. - Comfort: could improve. Tight bar seating, so serving from behind customers for every course is a bit intrusive. Ambiance - Bar side: good furniture, organized/clean cooking/prep area, great lighting - Wall side: inconsistent with what the restaurant is shooting for. Cheap paint, no design, weird lighting, and doubles as storage (unused tables and chairs lined against wall) Value: - 25 percentile for $250+ omakase - Charges extra for wasabi is a very weird practice for any Japanese restaurant. (In all fairness, my chef, who was very attentive and caring throughout the dining experience, waived the charge after seeing my bewildered facial expression) Compliments - Great amuse bouche + light dessert with berry sauce, absolutely amazing opener and closer. - Awesome eel without red sauce Critiques a) Fatty wagyu beef: in light broth is simply wrong and against culinary principals. This type of broth is used for white fish / light seafood, to complement the flavor or the main ingredient, but completely inadequate to suppress the oily taste of fatty red meat, even with yuzu peel in the broth. One bite and done, didn't want to finish the dish. Chef may want to try tweaking the soup base to better complement fatty ingredient. b) Crown melon: serving in one big slice is way lazy. Very inconvenient for customers. Please consider cutting and then serving on the peel.
