Located in Paia, Maui, we invite you to dine in our intimate, all Chef's Table dining room. Our everchanging Market Driven Menus always include a glass of sparkling wine, are Prix-Fixe, between 6-8 courses and range from $230-$300 per person plus tax, gratuity and any additional alcohol.

RESERVATIONS, CANCELLATIONS AND DIETARY RESTRICTIONS:
Seatings are at 5:00 and 8:00, so please be punctual. If you are late, please call to let us know. We will make every attempt to catch you up, but we absolutely cannot make any guarantees on coursing and pacing. Reservations are STRICTLY held by Credit Card. Cancellations within 48 hours of the reservation will be charged $200 per guest, WITH ABSOLUTELY NO EXCEPTIONS. Please allow at least 2.5 hours for dinner. Allergies or dietary restrictions must be made known to the restaurant when reservation is made. If dietary restrictions are presented without notice, we will make every reasonable attempt to accommodate them but can make no guarantees.

The food was of the highest quality and the most experience we have ever had. We feel that the food and experience was at the same quality as a Michelin Star restaurant. I would come back to this restaurant every time we are in Maui! Chief Jeremy and Paulina made the night so special for us and truly appreciate all their time and effort. Justina and Shifat

I hate to write negative reviews for a family owned restaurants, but I thought it’s important to give constructive feedback for growth of the business. My husband and I love tasting menus & course meals, and we were really excited to try this place as it seemed unique. I am not sure if we came on an off night in terms of menu items and selections, but we were quite disappointed with the food especially since we paid almost $900 for two of us. While the ingredients used were high quality and good selection, the combination of flavors didn’t make sense at all. For instance, one of the first course meal came with small sampler of snowcrab, bluefin toro, tobiko etc but it included a side of chili water shot which was extremely spicy and extremely potent and overpowered the rest of the items on the dish and didn’t make the dish enjoyable. Another instance was the foie gras topped with Ikura and served with picked cucumber. I love foie gras and I love picked cucumber, but I hated this dish. The ikura made the foie gras taste super fishy and the pickled cucumber tasted like straight up super potent vinegar, again the super potent pickled cucumber overpowered the balance of the dish tasting extremely sour. The dessert was the final dish where the flavor was too strong that it threw the dish out of balance. I love sour flavor in general and I actually did enjoy the dessert because it was really really really sour. But for the average person like my husband, the flavoring was too strong and out of balance. While the ribeye was good , it was unnecessary to pair it with tuna belly, which makes it a confusing flavor combination. The cherry tomato, corn and green bean were also not cohesive together, not to mention the green bean was uncooked. Also at $300 course meal, I’d expect attention to detail, but they forgot to include the cherry tomato for my husband’s dish. Fantastic. Really incredible meal. So many thoughtful components to each dish. I highly recommend the wine pairing as well. Strongly recommend!

When you pay this much, you expect the experience to be as good as the food. Upon entering we were pointed where to sit, not walked to the table. My husband ordered the wine tasting and the wife/server obviously pointed each bottle away from me and spoke in a hushed tone so I could not hear when she was describing the drink. I don’t drink alcohol but have never experienced feeling excluded from the experience, even at Michelin starred restaurants. First course- fish was not fresh but other than that, the food was very very good and I appreciate that the owner/chef was on his own to cook and plate for the entire restaurant.

We dined right before our flight back home, so we missed the main course. Yet everything else was fantastic. We will definitely be back when we are in Maui again.

NyloS was absolutely delicious and decadent. We took our adventurous eaters (kids) and everyone loved everything. Highly recommend if you want a high end foodie experience in Maui.

Wow! An incredible meal. Wonderful couple that owns and operates is so friendly and very good at what they do. If you can make it here you should definitely join them for dinner. Be on time and expect to enjoy the food and your parties company for this full tasting experience all made by one man. We will definitely come back the next time we visit Maui.
