Meso Maya's kitchen is led by Nico Sanchez, the executive chef.

Chef Nico’s love for the culinary arts started at age nine, when he worked for a bakery, making deliveries and assisting in the kitchen in Mexico. Nico honed his skills at several restaurants throughout the country, in states such as Vera Cruz, where he learned about seafood, dried chilies, and making sauces from scratch, and Oaxaca, where he perfected tamale-making techniques. In 1996 he left Mexico for Dallas so he could pursue his goal of becoming a renowned chef. By traveling from state to state throughout Mexico, Chef Nico learned many of the culinary skills that patrons in the area enjoy every day. Chef Nico earned his reputation within the Dallas restaurant scene by working at Cuba Libre, The Porch, Hibiscus, and Meso Maya. His food is celebrated for its complexity, unique presentation, and fresh flavors (thanks, in part, to his love of gardening—he grows peppers, tomatoes, squash, and onions).

Went for mother's day and sat on the patio. Food and drinks were excellent as always and enjoyed the outside even while it was raining. Love Meso Maya.

I love Meso Maya! I dine regularly at both the downtown AND Lakewood locations. I was in the West Plano neighborhood and decided to eat at this location - and was very pleased with my server. In fact, I sought out a manager to tell her how well the server did. I ordered the house salad and the posole verde. The salad was as wonderful as it always is, with those delicious sweet apple chunks included. However, at this location, the posole verde was so salty, I had to send it back. Just couldn't eat it. Also, the shredded chicken chunks were HUGE and had to be cut up, which is difficult with only a spoon. I am hopeful that the soup's saltiness was an accident, because it is perfect at the other locations.

I love Meso Maya, but I have to say that the service today was the worst I have ever had. The server was missing in action most of the time, and we had to hunt him down or find another server to help us throughout our dining experience. And, the restaurant was probably only about half-full, since it was after 2:00 pm. The food was delicious as always!

I had the carne asada, which was very good. It was cooked perfectly. The tamal was fair. My date had the chicken enchiladas, but did not like the sauce that covered it. The chunks of chicken inside were tasty. We were seated near a high traffic area, which detracted from the overall ambiance of our visit.

Our server, Jennifer, should find another line of work. She seemed angry. My wife’s wine was oxidized and Jennifer had quite an attitude that we were asking for a fresh glass. She walked by twice with our wine glasses empty. I tried to get her attention to no avail. She had us hand her plates off the table to clear it. We were going to have another glass of wine , but Jennifer tossed the bill folio on the table and said, “Here ya go!” So, I guess we’re done. My wife’s taco’s were cold. We didn’t dare say anything to Jennifer as we didn’t know what reaction we’d get. We’ve been in for lunch a few times. This was our first dinner. We won’t be back.
