Back after more than a two year closure following the George IV Bridge in late 2021, Merchants has undergone a full refurbishment. Merchants serves Scottish cuisine in one of the most bustling areas of Edinburgh. Braised shin of beef, haggis and seared seabass are some of the dishes on an ever-changing menu, and the restaurant is happy to try and cater for any specific dietary requirements. Situated at 17 Merchant Street, Merchants Restaurant is proud to use fresh, locally sourced produce in its dishes. Historic Edinburgh Castle is a nine-minute journey on foot and Greyfriars Kirkyard a mere two minutes walk.

Excellent food and very nice staff. We really enjoyed the evening. A bi dark in the restaurant, but overall very nice.

Very well located in the Old Town, at the bottom of Victoria Street, not only does the food provide a great experience (we were 7 and tasted among ourselves all starters and mains available : everything was perfect, from the meat cooking to the seasoning), but the main takeaway for us was the service : everyone was extremely friendly, useful and of good advice. Next stop in Edinburg, we'll make sure to come back !

Absolutely outstanding! The service, ambiance, flavor and plating were all first class. We could not be more pleased with our entire experience and will certainly be back and strongly recommend to others.

Great dining experience. The food was excellent as was the service. A special mention to Logan who looked after us all evening, he was very attentive without being overbearing. The restaurant has been tastefully renovated and they are serving excellent food at a reasonable price in lovely surroundings with great young staff. We will definitely be visiting again.

Merchant’s Restaurant in Edinburgh is an absolute gem! The atmosphere here is just perfect. The staff go above and beyond to ensure every guest feels welcome and attended to, making the service standout. As for the food, it’s simply lush—every dish is a burst of flavor and beautifully presented. Highly recommend visiting for a truly memorable meal!

What a fantastic find for a celebratory dinner! I loved the interior and the thought put into all the details, from decor to presentation of dishes to the dishware itself! The food was just as fantastic for me as a vegetarian as my family of carnivores! Drinks were spot on and the staff friendly and attentive. Wish I lived here so I could come back often!!

We had the loveliest night for my birthday, they made me feel so special. Everything from start to finish was fabulous and each course was delicious. Will definitely be back and highly recommend.

This is a genuine hidden gem in Edinburgh. The restaurant is beautiful and the moment you walk in the staff are attentive and respectful. The atmosphere is lovely, really nice restaurant vibe without being stuffy at all. The food was incredible, each course exceeded expectations and the staff were able to advise to suit our tastes. I would highly recommend Merchants to all my friends, casual diners and foodies alike. They really have hit the nail on the head with this place. We will definitely be back next time we are in Edinburgh, thank you.

Good food, fabulous staff, not busy, which is a shame as other places nearby, that were heaving, weren't as good. Hope they do well as have lovely ambience and staff were great
