Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Despite this big change, our principles initially founded remain the same: to offer food that distinguishes the best of local products.

    The place: noisy and crowded, management is definitely more focused on revenue than comfort and a pleasant experience. Constant traffic in between tables, not much space, got bumped in the back (unintentionally) a couple of times. Oh well, it can happen... Service levels: overall good, for this type of restaurant. However, they try a bit too hard to sell bottles of wines from the wine list. The food... yeah, the food... Ordered the well-reviewed cheeseburger, no more left for the evening. Well, again, it happens right? Not at their level, it shouldn't, and not early in the evening. A well-run place would not have this problem. Switched to pasta, the dish came in very salty. Sent it back to the kitchen, the second one was better, but still not much to write home about. Of all the restaurants tried in CDMX in a rather long vacation, this was the biggest disappointment. Portion sizes: small. Food quality: average for CDMX, some dishes a bit better than others. Prices: high. Overall value for money: low. Look elsewhere, there are plenty of choices. This place seems to be geared towards squeezing your wallet, not providing a memorable experience. Management had plenty of time to make the right decisions. And they likely did... but for them, not for the customers. Hoping not to get a generic reply to this posting "your feedback will help us improve". It's not a mistake or detail they need to fix, it's an entire approach that needs rethinking... Again, they seem to have gotten it right, just not for you.

    One of the top five meals of my life. Truly a special place. Do the tasting menu if possible. Service was excellent with a wonderfully informative sommelier. The star was the food. Baby squid, kampachi, wagyu rib eye all were phenomenal.

    Food Excellent, The restaurant is nice with open kitchen and the service is very good. I recommend to try the restaurant at least for one time.

    En general muy bueno. Pero para el nivel del restaurante hubo 3 cosas que no le gustó. 1. El servicio un poco lento no solo esta ocasión también las anteriores. 2. las tortillas que nos llevaron para acompañar la lengua con mole estaban duras pedimos que las cambiaran y las siguientes ya no estaban duras pero no se notaban hechas a mano. 3. no sirven agua de garrafón como por ejemplo si lo hacen en el Rosetta, lo cual sería excelente detalle y tuvimos que estar pidiendo una cantidad enorme de botellas de agua.

    The tasting menu and wine pairing is fantastic! The pairings were top notch, and everything was coursed out over a luxurious 3 hours.
