KAEDE is the ∼寿司割烹∼ "Sushi-Kappou" restaurant, which is hybrid between Sushi Bar & fine Japanese Bistro. It is a style of Authentic sushi restaurant in Japan.

Owner/Chef Izumi Uehara and Executive sushi chef Shinji Uehara had been working and learning in The Netherlands, Japan and San Francisco, then have cultivated knowledge and technique about sushi and Japanese cuisine.

Please enjoy the harmony of sushi and dishes and atmosphere that is weaved by us with senses

(Sight, Hearing, Smell, Touch and Taste),

beyond that, we aim to produce a warm and comfortable dining experience its feeling like Japan for everybody,

please spend such a fun time with us in "KAEDE".

We really enjoyed the high quality food and service - like being back in Japan! It’s a shame you can’t book for 4 people as we’d like to go with friends.

What a special dining experience. I sat at the bar and ordered the seasonal squid small plate, and the chefs special premium nigiri and all the flavors were excellent. The ambiance was warm and welcoming. I'll definitely be coming back.

Absolutely perfect every time we go here! I love sitting at the bar and getting nigiri as the chef prepares it and then a brief description of what I’m about to taste. My favorite restaurant!

I had a great time at Kaede! Surprisingly, Portland has a lot of great sushi options. Coming from the Bay Area I did not expect this bounty of excellent options when I moved here. Kaede adds to that list, offering higher quality than my mainstay (Murata) at a similar price point. I loved the way the food was presented over time, loved the tea, loved the desserts, and I think generally this place offers immense value on the high end of sushi. You can pay a lot more for a lot less in this town. I also love the 1 seat/2 seat setup- no loud kids, drunken groups of frat boys, etc. Loved Kaede and will absolutely be back! I plan to take my half-Japanese mother and my Japanese grandmother when they visit- that is how good Kaede is!

We have visited several times and it is always a delight. Wonderfully composed nigiri menu with some interesting preparations and great classic 'bistro' dishes like agadashi tofu and chawanmushi. Very calm, quiet, casual environment with pleasant service.

Our overall experience was outstanding in every way and definitely the best sushi we’ve eaten in Portland. It’s a small, intimate, and quiet setting and it was perfect for our anniversary dinner. A little on the picky side, I’ve traveled to Japan a couple of times and love and appreciate good Japanese cuisine. Another positive, the service was quick and responsive just like I hoped. I highly recommend Kaede and I’ll be back for more again.

We enjoyed an intimate experience at the bar. Chef Izumi-san and Shinji-san are friendly and willing to answer questions about sushi preparation. The nigiri is elegantly shaped and shari is well prepared (firm and gently seasoned). All neta were very tender and delicate and almost always at the perfect body temperature—the variety was pretty impressive given this restaurant is smaller and run by a very small team. The saba battera was remarkably clean and refined. The sake selection is reasonable and interesting for a place of this size. Feels like a true family run business where the quality is so high due to the talented chefs playing fully active roles behind all the cooking. KAEDE is now one of my favorite sushiya in PNW. 戻りたい！ほんとにありがとうございます😊

We love Kaede. As new parents, we struggled to get out of the house for dates. We found Kaede and have been faithful patrons since; we go almost once a month. The food is incredible (every bite is perfection). The service has set the bar so high. The ambiance is quiet, lit for the mood, and very intimate. We always sit and the bar and not only enjoy an excellent meal, but also meditative entertainment. I recommend Kaede to everyone.

Life is short! Please treat yourself kindly and get a reservation to this place! I sat at the sushi bar and I really enjoyed watching the master chef skillfully prepare some exquisite food, every action was like carefully orchestrated! Not only did he have to create an edible delicacy out of chunky piece of fish, but also turn it into a piece of art, from selecting the plate, to adding all the fine details onto the fish, the subtle flavors and the harmony! And I got to watch it all happen in front of my eyes! I went by myself and didn't feel awkward at all! This place is near where I live, so the situation is quite dangerous now, lol!

Best sushi ever. We’ve been here multiple times and it’s always spectacular. Impeccable service, delicate and balanced flavors. There’s nothing else like it. It’s honestly our favorite restaurant in Portland. If I could change anything I’d love for the jazz to be a little louder, and I wish they accepted reservations for more than two. But I respect their decision and wouldn’t want larger parties to impact their ability to maintain quality. It’s just such a special place we wish we could share it with more people.

Excellent! Can't wait to come back to Kaede. Fish tasted very fresh, menu included fish choices not found at most sushi restaurants. Sushi was extremely delicious, ambiance nice and cozy, service was great!

Kaede is quite simply the best sushi in Portland, and likely for many miles farther afield. My wife is originally from Tokyo and I lived there for a long while -- Kaede is the only sushi restaurant we've been to in Portland that looks, feels, and (most importantly) tastes like a Tokyo sushi restaurant. The fish--most of which are shipped in from Tokyo's famed Tsukiji fish market--are fresh and flavorful, with thoughtful additions from the chef that range from traditional to innovative (such as shiso leaf or pickled jalapeno). We generally pair one order (each) of the premium nigiri omakase with one or two sushi rolls (such as the Saba Battera) to make sure we leave nice and full, with starters like the Dungeness crab miso soup or kushi katsu (fried scallops) and desserts like the sake kasu tiramisu bookending our meal. Much like the fish, Kaede's extensive sake and beer menu includes several items imported from Japan, including Orion beer -- an Okinawan staple that is hard to come by in area restaurants (and that's actually priced well here given how expensive it is at the few local grocery stores that carry it). Last but not least, the vibe here feels straight out of Naka-Meguro or some other trendy Tokyo neighborhood, with thoughtful design touches, great ambience, and a welcoming staff. An absolute 10 out of 10, and then some. Gochisousamadeshita!

Sushi is obviously very high quality and delicious but service was pretty lame. Our waiter would walk away before we had the chance to ask questions about the menu and was reticent to share recommendations or insight. This is definitely good food but it’s a pretty underwhelming experience - nothing about it felt special.

While the omakase off the fresh sheet is the star of the show don’t forget to try out some of the spectacular appetizers and izakaya. I particularly love the chawanmushi which has rotating seasonal flavors. Also love the tofu and the Dungeness crab miso soup. And leave room for dessert, which was a superb tiramisu crème bruleee. Also the tamago is a perfect end of course treat. Just get everything.

A very sublime and Japanese experience. Run by people who want you to love their restaurant but really stick to their values and standards. Not at all a California roll/lots of wasabi kind of place. Great respect for their ingredients.

Quiet, muted conversations as we wait for exquisite dishes to arrive. Reservation only and we lucked out with the last time slot on a Sunday night. We tried at least five dishes and each was special, high quality and delicious. We will be back to try the rest of the menu.

Incredible sushi. Perhaps the best in town. The house special roll and unagi/ikura were extraordinary. Cannot wait to return. Decor/lighting could be enhanced, but the food stole the show and made the rest irrelevant. Bravo.

The food was very good but not over-the-top. Given the hype and the wait - 6 months to get in only three stars. I can go to other more approachable sushi restaurants with less fuss to get in and similar to better quality for similar to less cost. All around good to a few great morsels, but nit all around great. - signed looking for the best in food.

Best sushi I’ve had in portland and some of the best sushi I’ve had outside of Japan. If you’re looking for fancy rolls with mayo and tempura, go elsewhere. If you’re looking for authentic edo-Mae sushi in a quiet setting, this is your spot. The starters were excellent as well, the chawanmushi was unbelievably flavorful.
