J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    Wines priced 4x to 5x retail, which is already 2x to 3x wholesale. Shared tomahawk tasty but kind of fatty. Large quantities of salt on nearly everyhing. Service quite good but... for the prices, attitude and attempt to offer a cool vibe for the mostly more well to do clien clientele, it just didn't measure up.

    James, our bartender, was perfect. He guided us on food choices and drink choices and wine pairings. I have not experienced this level of service at a bar in a very long time, and it was so unbelievably good, that we will return on Wednesday nights when James is back behind the bar!

    JCarver's is probably my favorite restaurant in Austin. Everything is exceptional including the service

    Everything was amazing as usual besides the table we were sat at. I felt we had no privacy and i was very uncomfortable. When dining at a upscale restaurant, I would expect to have a better seating and to be able to converse without being worried the people near me can hear my whole conversation.

    We completely stumbled upon a real Gem last night! This restaurant moves all the way up to my #1 in the world! We started with escargot, now when I say Escargot I think it does not do it justice. The escargot was swimming in a bath of butter, garlic and herbs so delicious topped off with like popover that was so delicate. Then we moved on to the soft shell crab…. Mmmmmmmmm! Our main course we shared a 10 ounce filet cooked exactly Medium with the best char/sear ever!!! Our dinner was accompanied by loaded baked potato gnocchi and sautéed asparagus. In all my years I’ve never heard of loaded baked potato gnocchi, it was absolutely superb. We finished our dinner off with cream brûlée and coffee which was also the very best.

    After 2 visits, J Carver’s has become my favorite. It’s a speakeasy steak place. Everyone working there treats you like you’re their best regular. From right when you walk in to the bartenders. Food, drinks, wine and the exceptional atmosphere can’t be topped

    This was our first visit, toJ Carver‘s. The building is very unassuming from the outside. But once you step in, you know that you are in for a real treat.  From being greeted by the maître d’ and hostess, they put our party at ease, and mad us feel very welcomed. Both the wine and drinks were wonderful. Appetizers out of this world. All of our entrées were cooked to perfect perfection with an outstanding degree of professionalism! We can’t wait for our next meal at J Carver’s!
