J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

The food is quite good. We were seated at a booth right by the door so the comings and goings of guests was distracting. My biggest complaint is the restaurant is way too dark. We had to use the flash lights on our phones to read the menu, see our food. We finally asked for additional light on our table. When you are spending $350 for a dinner out, ambiance is so important AND I want to see my food! There were much better tables so when making your reservation, tell them you don’t want to sit in a booth by the door!

As always a great evening at J carvers and it was our first night being served by Brendon. He did an awesome job, food, wine, cocktails were all A+. If you haven’t been you are missing the best scene in ATX!

We were on a girls trip in Austin and this place came highly recommended . My expectations were a lot higher. The steaks were overcooked, the service was mediocre (too busy, the servers aways ina rush), The Escargots were super salty, The best part was the deserts and the cocktails.

Absolutely stunning experience at J Carver this week. Was greeted with a complimentary glass of champagne while waiting for our table to be ready. The drinks and wine were served well and the wine was correct temp. Had the bone marrow with toast app, very rich but well seasoned and cooked. Dinner we shared the bone in filet, which was one of best steaks I’ve had in the country. Recommend greatly.

Most amazing evening my server was out of this world a gentleman had suggestions, patience recommendations. Every dish was delicious. He recommended the portions were enough to share. I will recommend this place.

The hospitality, service, and the food are always impeccable. If you have a small wait, they take care of you. There is a reason J Carvers has so many 5 star ratings.

Not only was the food amazing but it was an actual experience. The service was out of this world. Soon as they found out, we were celebrating a birthday they came with two glasses of champagne. They also brought us a dessert. I was beyond impressed and this is a Restaurant. I would recommend to anybody that wants fine dining or a romantic dinner. The waiters are extremely attentive. The presentation of the food was also immaculate. It looked as good as it tasted I highly recommend!

This was one of my most favorite dinners. The overall experience was one of a kind. I would highly recommend it if you are looking for a nice steak/seafood dinner. Solid!

Wonderful evening celebrating sister’s bday. Highly recommend. Great service. Kind of old school ambiance which we appreciated. Food was fabulous. We loved everything that we ordered especially the crab cake and the bananas foster bread pudding. My only recommendation would be to add some more better beers to the menu. Maybe a Stella Artois or Heineken. Otherwise a perfect evening! Cheers to another visit soon!

We were seated promptly. It was great to see a few new additions to the menu. The oysters were so good that we ordered a second dozen. We ordered the Dover sole and seared tuna. Both were delicious. The drink orders were a little slow, but we really enjoyed our evening.

Tastiest food in town! Espresso Martini is full bodied coffee flavor but I dont think you will ever eat a better crab cake in your life and the potato gnocci- out of this world.

One of the best meals ever! Excellent and attentive service. Everything we ordered was delicious. They had a hand signed card on the table wishing us a happy anniversary - what a nice touch. Wish I lived closer, I'd be a regular!

Hands down my favorite restaurant in Downtown Austin. Kinda sucks that our 4 Year Anniversary wasn't acknowledged. Service was still great. Of all the times I've dined here, the bartender informed me that my medium steak would be a warm red center when it's usually a warm pink center. So my steak was a little rare for my liking this time. I just decided to eat around it which was unfortunate. Had dessert at another restaurant since they neglected to acknowledge our anniversary.

Caviar and bone marrow are perfect. Dripped in gold is nice . Seasoning and cooking for the fry oyster can’t be even better . Only the steak from the carpet bag style is over seasoned. When I mentioned about it , the waiter just ask me if I want to take it togo.

One of the best restaurants in Austin!! The ambience is fantastic and feels like a cool speakeasy bar while the food is up to par with its sister restaurant, Red Ash. The service was amazing, and our waiter, Brandon, was highly knowledgable about the entire menu and wine list. The garlic bread (!!!!) and seafood appetizers are not to be missed (Tuna Tartare and Smoked Hamachi) and the Cod special was one of the best seafood dishes I've ever had. The entrees and sides were all fantastic as well and the chocolate cake dessert was fantastic. The drinks were also amazing, no bad things to say!

ALWAYS delicious! a surprisingly tasty crabcake started our evening, love the ambiance and the steaks are DIVINE. We survived the protesters who had bullhorns and were loud and disruptive but were quickly ushered out. The staff rocks!

Everybody was so kind and accommodating, considering there were delayed flights, and we know it’s a busy place. Our waiter. Brad was awesome. We also stayed a little after closing catching up with our college kids and they didn’t fuss at us about it. So gracious thanks.

We love J carvers! The seafood is amazing and fresh. You can get full from just the outstanding appetizers. The drinks are creative and delicious. Not to mention the steak!! Run don’t walk if you want a nice meal with amazing service!
