We arrived and hadn't realized it was attached to a hotel. They tried to seat us at couches, but they were too low (table at our chins). But they were very gracious about finding us a real table. Food was excellent.

Nada made wonderful suggestions and allowed us to sample draft beers to make a perfect choice! And not rushed but she asked early on if we had to get to theatre to make sure we could if needed!

Fabulous food and service. Went there before the ballet on a Saturday afternoon. Had the salmon which was sweet and spicy. Perfect combination. Just the right amount of food. Service was so quick that we had time to take a walk around downtown before the performance. Would definitely go again

Came for Denver Restaurant Week and overall it was a good experience. Cute atmosphere and ambiance, food was pretty good but over priced for the portions you get. 6.8/10 most likely wouldn’t eat here again, you could very easily go to another high end restaurant and have a much more worth it experience. Side note, the dessert was truly incredible!

It was restaurant week, so maybe they were understaffed, but it wasn’t overly crowded. We didn’t get our first drink delivered until 30 minutes after sitting. Partly because of not taking the order and then fulfilling order was slow. Painful. Some managers delivered our food, but otherwise they weren’t seen. Seemed weird when the server was obviously struggling. She was nice, but not very effective. Food was decent. The Gotham Greens salad and Bison Prime Rib being the best two items. Drinks are pricey… $12 for IPA. Not eager to return any time soon, unfortunately.

We were here for dinner during restaurant week. The menu was fantastic and everyone enjoyed their meals. We were deliciously surprised by the lemon pearls, the cherry/white chocolate sauce with the lamb shank and presentation of the black forest cake. We shared a bottle of Blue Bear Red Blend which was a fun find across from the Big Blue Bear. We were given a complimentary cheese board which was a nice touch. Service was timely and friendly. We had tickets to the theater and felt a little rushed since dinner service doesn't start until 5:30pm.

The dining experience was lovely overall. Food was presented nicely and our server was great. I was with three people and we all tried to order differently to try a variety of things. Overall, what I had was my favorite of each course - chicken and waffles, blackened bass and caramel apple cheesecake. All delicious and in reasonable individual portions for Restaurant Week.

Really excited to try this place but they were out of both the bison prime rib and cherry braised lamb shank which were my primary reasons for choosing Former Saint for Restaurant Week. Pretty disappointed, I got the blackened bass instead which was good but the Carmel apple cheesecake ended up being the tastiest. The drinks were watered down and our server disappeared for 20 minutes.

We tried Former Saint because it was convenient to the DCPA where we were attending a performance. It is in a spacious and beautiful setting in the lobby of the Hyatt Regency. Our server, Mia, was delightful and very accommodating when we asked to split an entree. The food was delicious as well! It couldn't have been a happier experience, and we'll return; we'll probably sit at a table rather than the couches by the window...it was a challenging reach.

This was going to be a quick meal before a show at the Bellco Theater. We had 6:15 reservations so we had an hour. We were told by staff that there was no way they could manage dinner in an hour so we had cocktails and a charcuterie board which consisted of a ton of one kind of cheese and some salami, really nothing special. And this may sound petty, but the chairs at the bar and restaurant don't have any back support. The most uncomfortable chairs I've ever sat on.

We were excited to come here due to the interesting menu, including some gluten free options and some vegan options. Our server was friendly and knowledgeable, but she disappeared towards the end of the meal and we almost missed our 8:00pm show. The onion soup was great. The steak entree was just OK, as was the gnocchi entree. The cocktail menu and wine list were both good. The ambience was beautiful but it was freezing cold inside the restaurant.

This review is only for Open Table, not Former Saint. Former Saint was excellent. Open Table really dropped the ball. I made a reservation at 1:45pm for Former Saint’s Christmas dinner. We found out when we arrived that the Christmas dinner service didn’t start until 4pm, which was not made clear on Open Table. What also wasn’t made clear on Open Table was that Former Saint closed from 2-4pm.

1st time at this restaurant. All of the exterior doors were locked, we had to go to the main hotel entrance. The wine we ordered was given to the wrong guests. The scallops were not hot and were $2 more on the receipt than on the menu and did not come with all of the items listed on the menu, they were just 5 scallops and garnish, no other sides, that had to be ordered separately. The waitstaff was aware of some of these issues and said they would comp a dessert. We ordered a dessert, but was still on the bill. We asked for that to be removed, which was done, but a $17 martini that we did not have was added to the bill. When the restaurant was contacted later that night, the martini was refunded. The staff was very nice and was trying to make things right.

I made a dinner reservation at Former Saint, arrived and was told the restaurant was closed for a private function. Yep, they apparently don't block out dates on OpenTable. This resi was before an event so we didn't have a lot of time and I knew other places near the convention center were fully booked (which is how I ended up choosing this place I'd never heard of). The only bright spot is that an employee referred us to the bar on the top floor of the hotel, took us up there, and made sure they comp'ed a round of our drinks. At least the food upstairs was tasty.

I made a reservation a month ago and the entire restaurant was closed for dinner service permanently when we arrived. Had to go to a chain just before a show. Very frustrating.

Hostess first tried to seat us next to service entrance to kitchen in a fairly empty dining room. The it took 10 minutes for a server to come by. 15 minutes to get a glass of wine. Food came out timely but chicken in my salad was dry and over cooked. My friend’s chicken and waffles tasted good, but the waffles were soggy. Will not come back.

While a restaurant inside the hotel, the atmosphere was pretty awesome! They have a limited menu, which is OK. We started off with the tomato appetizer. It was absolutely absolutely out of this world! Little gelatin balls that pop in your mouth full of lemon. Smoked salt that was kind of hidden on the dish, but really came through when you ate it. The only downside were the tomato slices being a little too thin (you could fold them up into little tomato tacos). I had the Cobb salad which was pretty fantastic as well. The dressing, although sweet, was very subdued and hidden - which I like.

This was such a disappointing Mother's Day brunch. The food was mediocre at best, some had no flavor at all. The dessert pastries were very limited and we could not tell what flavors they were supposed to be because they were tasteless and the fillings were dry. The service was horrendous. Our server kept disappearing, especially when it came time to pay the bill. He finally dropped the bill off and did not seem to be planning on returning until we asked the bartender to get him. Overall we were very disappointed.
