Em uses known ingredients, with deep roots, in unconventional ways. From the heat of kitchen, to the speed of service, huitlacoche becomes a small tart with Ocosingo cheese; cactus, in a broth made out of fish bones; escamoles, in small round croquettes with a dash of serrano. Our kitchen is the result of a long and dedicated process: is it the influence of different techniques, national and international, in the attempt of establishing a signature. The selection of the best product is merely the beginning of our creative process, is it a point of departure that leads us to unusual decisions, that end in dishes with soft yet intense flavours, shot and long-lasting, new and known. Em is not a type of kitchen, it is an inquiry of its own style that seeks excellence.

Great food, but I recommend you to request a table inside the restaurant. We made the reservation and when we arrived they only have tables outside. And it’s not good if you are celebrating a special occasion.

I was on my own so I could fully focus on the Omakase experience. It was extraordinary. Very high end cooking without leaving the Mexican ingredients and heritage. Although quite spicy priced (The Omakase menu is 2100 pesos, which is currently approx. USD $100) it’s worth every peso. It’s a continuous 2 hour fest of little plates arriving. (I counted >10). Meticulously prepared. Very Mexican and well balanced within the total Omakase menu.

Food is amazing, creative and innovative. Plates are well presented and explained. The atmosphere is laid back. Its a nice dim lighted small space. The cocktails were very good. There is only one bathroom for Men and Women, which did not look very tidy or clean. Service is so so, nothing special. Our waiter was very forgetful. We asked for an extra glass, he forgot, we then asked for a paper napkin, he forgot too, asked a different waiter, didn´t bring it either. We then ordered and he brought an extra plate we had not ordered. We didn't make a fuss and ate the unordered plate (a salad which was very good). We would have also appreciated a wine menu, and not just have the waiter try to remember all what the restaurant had. Note aside: Unfortunately we found a piece of plastic inside a "croqueta de gusano" and told the waiter. This can happen in any restaurant in the world and we understand that. We didn't demand anything, just informed them. He just said he would "check it", but did not apologize or suggested anything to make it up, just left. We again did not make an argument about it, we were not in the mood to have a discussion, but just felt maybe the restaurant could have maybe done something. At least offer a complementary coffee. Go to EM for excellent food and drinks, but don't expect to be taken away with their service.

Dada la asociación que existía de este local y Máximo Bistrot, hace que cualquier antiguo cliente piense que se trata de un relanzamiento con una submarca, lo cual es totalmente erróneo. El espacio es el mismo, pero la mejora es sustancial: mesas y sillería de mejor gusto y calidad y una iluminación muy agradable, y por supuesto un conjunto de creaciones culinarias con gran personalidad. Los platillos son de gran nivel de recordación por su mezcla de ingredientes autóctonos de primera calidad llevados a su máxima expresión, como por ejemplo sus croquetas de escamoles, o los sopes miniatura de huitlacoche cubiertos con queso de Oconsingo. Desde luego también hay otras creaciones más contemporáneas como un flatbread con erizo, o unos extraordinarios champiñones en espuma de papa. Los detalles se cuidan al máximo, por ello antes del postre se sirve un pre postre de hierbas aromáticas y cítricos que eliminan el gusto de los alimentos y así poder deleitarse con los sutiles sabores de la tarta de mamey. El servicio impecable.

My friend wanted to try this place because it was highly recommended. It has a nice ambience- but the server (who was swapped out) had a bad attitude. He insisted we order our whole meal up front even thought we wanted to start small and order more as we went on he did not want to give us silverware but we insisted we should use our hands for the starter. (We are 2 girls that do not take large bites .. call it small mouths). Other than feeling rushed and a little talked down to over dinner (not enjoyable) —- the reason I gave this a bad review is the beef wagyu. We sent it back bc I knew it was ‘off’. Today I have confirmation that it was off. I jump out of bed for some emergency time in the bathroom. :l

This was an atrocious experience. Service was exceptionally poor and the food simply left us wondering “why?” There was a complete lack of inspiration and creativity. For the price, this was debatably the worst meal I’ve ever had.

La comida y selección de vinos bien, sin ser espectacular para una cuenta de 6,000mil por 3 personas. El servicio bastante malo. Cuando llegue solo había una mesa e ingrese albaño inmediatamente; estaba sucio y tapado. Lo reporte con un mesero y nadie tomó acción inmediata y ni me avisaron cuando lo limpiaron y tampoco se disculparon (solo hay un solo baño para H y M). También ha sido muy desgastante pedir una factura. Llevo 4 días sin recibirla y cuando hablé por teléfono para exigir que me la envíen, la hostess contestó “aghh”. Servicio muy poco profesional.

Interesante propuesta gastronómica. Resaltan los ingredients y los hacen los protagonistas. Sin embargo, falta, en mi opinión, pulir los sabores de los platos. Las lentejas el mejor plato. Buen balance con el chorizo. Las croquetas de escamol es y las tartaletas de huitlacoche quedar9n cortas de sabor. El pescado zarandeado era más bien cocido. Eso si, en un muy buen término. El postre fue realmente lo peor. Congelar una ciruela, por buen que este, deja mucho que desear. El precio está al nivel de restaurantes como Quintonil, pero sin los sabores. Una buena propuesta que deber desarrollarse todavía.

The food was excellent from start to finish. Really interesting use of ingredients where they're beautifully showcased. However, the service was a bit spotty at the beginning. I wasn't brought the drinks menu or even told there was an Omakase. It wasn't until I was ready to order the server mentioned this. I ordered the Omakase, despite their disbelief. Once the service started it was excellent. However, on the check, I noticed it said Omakase B. Based on other reviews, I can tell there's a shorter, Omakase A. I was never informed of this and was automatically led towards the more expensive option. I've seen this in a few reviews, which is unfortunate for such an excellent restaurant. Some advice: never ever look down on your clients. I ordered more and tipped better than those around me despite the initial encounters.

Me parece increíble que cuando gastas 10,000 pesos de cuenta para 4 personas te estén presionando todo el tiempo para cambiarte de mesa. La comida en general me pareció de promedio a mala y pretenciosa.

The regular and tasting menus at EM are always amazing!! If the escamoles are in season, I would highly recommend the fritters. They are nutty, light and delicious!! The flavor profiles of their mexican-asian fusion dishes really work.

La comida ESPECTACULAR! pero el servicio y algunos detalles del restaurante si nos dejo que desear … En términos generales, en cuanto al servicio: lento, confuso y poco personalizado… se nos hizo de mal gusto que no puedan ofrecerte pan (sin costo) y que te cobren el Limón que pides para el agua mineral (cuando la botella cuesta $120).

Food was spectacular no complaints. My complaint is with my server. Had originally ordered the Kampachi collars and not the crudo. I was okay with taking the crudo because I wanted to try it anyways. I had asked the server if the collars was still in the progression just in case he got them confused with the Kampachi crudo. He proceeds to say yes that it is still in the progression that it hasn’t came out yet because the crudo is lighter in flavor. Cool, I agree. Wagyu brains comes out. We eat it. Then wait for the next dish which ends up being the grilled duck. I get confused and ask the food runner wasn’t the collars supposed to be before this? He goes and grabs the server. I explain to the server that he told me the collars were going to come out before the heavy courses but the grilled duck and Parker rolls already came out. He then proceeds to say “they did come out. It was the small toasts After the crudo.” I said no that’s the wagyu brain. He goes on and on still trying to convince me that the Wagyu brain was the Kampachi collars. He finally stops and then says the Kampachi collars was the crudo. At this point I’ve lost all hope with the server and ask to cancel the rest of my progression and get the check. We wait for 30 minutes and still no check. Shiso palette cleanser comes out and again I have to ask for the check. I check the check and we were charged for the shiso even after we had cancelled it. I was ready to leave so there was no point in bringing that up. No one really seemed to care to make anything right which was what upset me the most after the server.

La comida excelente, tmb el servicio. Pero tuvimos problemas con el vino: probé dos muy malos, muy caros. Finalmente encontré un buen albariño, pero estaba al tiempo. Pedí que lo enfriaran antes de servirme. Cuando finalmente lo sirvieron, era una cantidad ridícula: menos de la mitad de lo que se sirve en copas de vino blanco (que son chicas) en otro restaurantes de este nivel. Para terminarla de amolar, cuando llegó la cuenta me habían cobrado la copa doble, cuando sólo tomé una tan chica que me la terminé en 3 tragos. Definitivamente me decepciono esto, aunque el resto de le experiencia fue buena.

Una experiencia increíble. Desde el mobiliario y la decoración, hasta los increíbles sabores y presentaciones de cada platillo. Además de una atención excepcional en cada momento. No puedo esperar a regresar!
