    A visit to Carlos' Bistro is like a visit with family (a good one). Carlos and his staff welcome you in with open arms and a smile; it is like you are a regular, even when it is your first visit. We chose Carlos' Bistro for a birthday celebration, and everything was superb. The ambiance, the meal, the drinks were all excellent. I would highly recommend Carlos to anyone that wants to have a special evening as a special place.

    Always a great experience at Carlos’ Bistro! Whenever we get to the Springs, a meal at Carlos’ is a ritual! Carlos met us at the door, as usual, and made us all feel right at home. Stephanie knows the menu and recited ingredients and preparation methods of every dish with surgeon-like precision. The food, paired with the friendly manner of Stephanie and Carlos, made for a marvelous evening, just as we have come to expect!

    Delightful establishment. Carlos was a delight and Stephanie was attentive throughout the evening. The drinks, appetizers, and entrees were all top-notch. The most impressive selection of beverages I've ever seen.

    Carlos is a great host, very attentive and kind. The atmosphere was nice and the food was good. However, the prices were astronomical! A martini was $25, a fountain Coke was $10! The salted caramel gelato was so amazing until I saw that 2 scoops was $30! It ended up being a VERY expensive dinner. I would probably not go back because of everything being so glaringly over priced.

    Terrible. Ridiculously expensive, my pasta had dull chunks of overcooked vegetables in it, my partners meal tasted like they put Vicks in it. The server warned him it was “spicy” it was so over spiced you could not taste anything else. I get wine markups on cost, but a $25 glass of wine from a $9.99 retail bottle? This place is delusional.

    You are greeted at the door by the owner and he brings you to your table. There was not one time where are glasses were empty or our bread bowl. Food was absolutely increíble. The flavors I experienced were something out of a fairy tale movie. Would highly recommend this place. Every single dish was perfection.
