    Outstanding! Carlos was there himself to greet us in the parking lot and showed us our table. Our waitress, Stephanie, asked us our names and addressed us as such throughout the evening. The food was so fresh, came so quickly and was all delicious.

    The best food, atmosphere and service we have ever experienced. Carlos, the owner greeted us as we arrived outside. We’ve been here a few times and he has always remembered us. The food is the best we’ve ever eaten. The lobster bisque was delicious, perfectly cooked steaks that melt in your mouth and our favorite crème brulee. He also has an amazing wine selection. Truly the best experience we have had at a restaurant and we love to eat out. Thank you Carlos and staff for a wonderful evening out. We highly recommend Carlos’ Bistro!

    A visit to Carlos' Bistro is like a visit with family (a good one). Carlos and his staff welcome you in with open arms and a smile; it is like you are a regular, even when it is your first visit. We chose Carlos' Bistro for a birthday celebration, and everything was superb. The ambiance, the meal, the drinks were all excellent. I would highly recommend Carlos to anyone that wants to have a special evening as a special place.

    Always a great experience at Carlos’ Bistro! Whenever we get to the Springs, a meal at Carlos’ is a ritual! Carlos met us at the door, as usual, and made us all feel right at home. Stephanie knows the menu and recited ingredients and preparation methods of every dish with surgeon-like precision. The food, paired with the friendly manner of Stephanie and Carlos, made for a marvelous evening, just as we have come to expect!

    Delightful establishment. Carlos was a delight and Stephanie was attentive throughout the evening. The drinks, appetizers, and entrees were all top-notch. The most impressive selection of beverages I've ever seen.

    Carlos is a great host, very attentive and kind. The atmosphere was nice and the food was good. However, the prices were astronomical! A martini was $25, a fountain Coke was $10! The salted caramel gelato was so amazing until I saw that 2 scoops was $30! It ended up being a VERY expensive dinner. I would probably not go back because of everything being so glaringly over priced.
