Really had a wonderful meal. Our waiter was knowledgeable and very helpful. Amazing onion soup, delicious steaks, and a tiramisu like I’ve never had. Service was a little slow, but we will return.

I had an overall great experience at Carbon. The wait staff was attentive, the drinks were made perfectly, and I loved the atmosphere. The portions are a little bit smaller, but great quality. Wagyu meatballs are my favorite!

Had high hopes for this place but was let down. Service is a real issue. We had a group so it was nice to be seated upstairs in the semi private room but we were forgot by our server for long lengths of time. Steaks, onion soup, flatbread and tiramisu was fantastic but other than that, we did not feel like this was a high end steak place when the prices suggest otherwise. The only consistent service was the refilling of water. It took forever to get drinks, it took an hour to get our main entree after app was served and we even got served after the table next to us which was seated a half hour AFTER us. Not sure we’d go back, they would need to really invest in more or better help.

Went with friends for Downtown Dining week. The restaurant was very busy but our experience was so nice we all decided we will return We were not rushed and our waiter Thomas set a very nice tone and pace to the meal. A nice addition to the Milwaukee dining scene Caron also offers valet parking for a fee which is nice as the restaurant is in a very popular area in downtown

Appetizers, entrees, desserts excellent! Well prepared & nice presentation. Very surprised served NY strip for steak & frites (usually hangar, flat iron or sirloin) Need more separation between two-person tables at banquet. Slow service on drinks (arrived halfway through appetizers); slow service on sides (brussel sprouts arrived halfway through entree)

We chose Carbon as part of Milwaukee's Downtown Dining Week to try out this new steakhouse. Sadly, it did not go according to plan. Our experience at the bar was pleasant. The Blood Orange Paloma was excellent! Smooth & refreshing. Once we were seated, our server quickly came to the table, but literally RAN to another spot before asking for a round of drinks. We did eventually get 2 copies of the Downtown Dining menus after asking to review them. Another period of time & our server returned to take our orders. While we waited for our appetizers, we were served a plate of the "house" bread. It was tasty, but the 4 pieces (for a table of 4) went quickly. We asked for a second basket as we continued to wait for our appetizers only to find out at the end of our evening that we were billed for BOTH plates of bread. We received our apps: 2 tartars (very good!), flat bread (also tasty), & the onion soup. Unfortunately, we had to ask for a spoon in order to try it (not a fav, but ok). Then the wait. It took over 30 minutes for our 4 orders of med-rare NY Strip Steak Frites & 3 sides (garlic mashed, garlicky beans, mushrooms). We watched tray after tray of food go past our table. Never once did our server check on how our apps were or an update on our entrees. He was sprinting between tables, spending a lot of time at the kiosk, but managed to skip us. We asked another server for 2 drinks (old fashioned-fair, mocktail). The mocktail arrived as one with alcohol. Once the correct drink arrived, it was delicious (blueberry). The plates from our apps were removed, intermittently our empty glasses as well. Eventually our entrees arrived, but no sides. With no waiter in sight, we asked the runner about our sides. We started our entrees (chimichurri was fresh & bright addition, steaks cooked perfectly & well-seasoned, truffle fries very crisp) & waited on the sides. We finally told the runner (server still MIA) to cancel the sides. desserts to go (small portion) except forgot 1.

Impressive wine list and really great food. Having not been open very long the staff seemed a bit green, however, the food was not delayed nor did feel rushed to relinquish the table. Thomas the waiter is the best!
