Paon is an old school French restaurant in Carlsbad Village. They serve traditional French dishes very well. Most items are done very much to recipe. Both indoor and outdoor seating are available. Only shortcoming is the cheese plate does not include any soft cheeses.

This was our first time back at Paon in about a year and there were definitely some changes, including staff departures. Bill was always our requested server because we loved the way he would describe each dish and wine pairing and never ever made us feel rushed. He is truly a master at his craft and will be missed. All that to say that because we were not able to dine with Bill, we had the wonderful new opportunity to dine with Chris. She actually messaged me in advance of our reservation to inform me of the news and I sincerely appreciated the time she took to do so. During our dinner, she proved to be just as friendly, patient, and knowledgeable as Bill. Chris is definitely someone we’d love to dine with again! Regarding the food, it was as fantastic as always. Quality, flavor, and uniqueness of dishes is always 10/10. Paon has earned our trust in terms of trying something new even if it seems scary. For example, this is the best place to try things like caviar, escargot, and veal sweetbreads if you’ve never had it before. Snails may not seem appetizing but Paon will have you ordering them over and over again! When you near the end of your meal, you MUST order dessert! It may seem excessive to some but we (as a couple) always order these 3: mint ice cream (made in house), strawberries with balsamic, and the chocolate brownie. It’s hard to choose just 1…All 3 are amazing alone but are even better together! So glad to have this restaurant near me and I always look forward to visiting!

Our waiter and service was high-end professional more than any other restaurant in Carlsbad with great attention to detail as well as pleasant, polite without being overly familiar nor stuffy. Our waiter went above and beyond. The wine list is the biggest in Carlsbad. Waiter was an expert about wines. All main entrees were served nice and hot. Lovely menu. There is lovely alfresco dining in a beautiful garden, restaurant dining as well as bar and lounge dining with a friendly staff. And they have a wine tasting area as well. They have it all. Staff are very polite, professional and pleasant in all sections.

Food was delicious, particularly the escargot, gnocchi and pheasant. The risotto and spinach served with the pheasant was outstanding, especially with a hint of truffle in it. Service was exemplary as always with Evan.

The occasion was our anniversary so we came to Paon as a special treat and with the knowledge that we would be parting with some serious money. I look at restaurants as if they were three-legged stools; food, service and ambiance. So first things first. The food was exceptional -- my wife enjoyed her Colorado lamb, and my ribeye was delicious. Even the Margarita was among the better I've had lately. The Zinfandel and Merlot were good but not great -- at $15 a pour. Service was excellent; attentive. My problem is with the third leg of the stool -- ambiance. This is a restaurant that is beautifully located, has excellent food, service and an enviable reputation, but somehow ownership hasn't seen fit to honor it's patrons with anything more than a recreation of a back quarter French eatery of the last century. It is dark. It is drab. It is shopworn. It should be bright, airy, elegant. Where are the white tablecloths? We left Paon with many good vibes, but in our gut we felt short changed. We'll be back when management brings the dining room ambiance up to the standards set by the rest of the restaurant.

My family and I are locals and eat at Paon at least 3-4 times a year for the past several years. Sadly the restaurant is really going downhill. They recently stopped the music in the wine bar. We were greated by a not-very friendly hostess who turned out to be our server, Uhg. Food quality is not what it used to be. The bread is purchased and baked on-site and tasted like crappy fake grocery store bread. Meal was just adequate and not a good value. My understanding is that the owner (Steve) still owns the restaurant but is semi-retired, which to me means the restaurant is in transition to new owners. I hope the new owers have something else planned because the restaurant is not what it was. My family and I will not be back. There are too many better options in Carlsbad these days.

We hadn't been to Paon in a while so decided to go to dinner there. The food and service were exceptional. We will definitely go back sooner than later.
