Situé à 5520 Burnet Rd. (Suite 100), The Peached Tortilla propose une cuisine asiatique réconfortante, avec des variations du Sud. Bien que le restaurant ait incorporé quelques mets favoris de camions de bouffe à son menu—les tacos et les sliders en sont des exemples—certains nouveaux éléments viennent s'ajouter et s'inspire de l'enfance du chef Eric Silverstein qui a grandit en Asie. ATX Cocina experiments with the boundaries of Mexican cuisine. We have taken traditional Mexican dishes and elevated them with modern approaches and techniques. Corn, the basis of the Mexican cuisine for thousands of years, is also the foundation of our kitchen. We nixtamalize and process our masa in house sourcing it from heirloom varieties of corn grown by small family farms in Mexico.
