Situé à Eugene, en Orégon, le Marche a ouvert en 1998. Pouvant accueillir 80 personnes, le restaurant possède une cuisine ouverte agrémentée d'un magnifique four au feu de bois. Il dispose également d'un bar élégant ainsi que d'un grand coin repas extérieur, recouvert d'auvents et de parasols, et entouré d'un jardin d'herbes et de fleurs comestibles. Le Marche tire son nom du mot français "marché", ce qui décrit parfaitement l'emplacement de l'établissement dans la rue animée 5th street Market, et plus important, sa philosophie culinaire. Le menu du Marche se compose uniquement d'ingrédients que n'importe qui peut trouver sur un marché : des produits frais, régionaux et saisonniers. Ainsi, la carte évolue au fil des saisons. En outre, il ne vous proposera que des aliments sains de haute qualité, comme des produits biologiques, élevés en plein air et sans produits chimiques. La technique culinaire est d'inspiration française : dégustez des mets à la saveur intense, à la présentation simple mais très belle.
