Fondé par Alice Chan en 1958, son fils Henry, qui a repris l’affaire, a commencé à préparer des dumplings à l’âge de 9 ans et a déménagé au 49 Stevenson en 1974 où il a connu un succès immédiat dans le quartier financier.
