In March of 2013 renowned vegan Chef Tal Ronnen opened Crossroads at the corner of Melrose and Sweetzer in Los Angeles. Il dispose d'une armoire vitrée de maturation de la viande à sec. Le bœuf du Midwest de qualité supérieure est vieilli durant 21 jours à 37° Fahrenheit et 67 % d'humidité relative. Ce processus attendrit la viande et lui donne une saveur distincte, encore accentuée par sa préparation sur un grill à mesquite à foyer ouvert. Une fois installé dans la salle à manger, vous vous sentirez comme chez vous grâce aux pittoresques peintures ornant les murs verts, au bois sombre et aux cabines de cuir diamant rouge créant une ambiance intimiste des plus confortables.
