Rolling PinDas Nudelholz ist dabei nicht nur ein einfach gewähltes Symbol. Der Fokus der angebotenen Speisen liegt auf raffinierten, teigbasierten Speisen. Anders gesagt Rolling Pin ist der „falsche Italiener“. Zum einen Flammkuchen, wer hier jetzt an den Klassiker „Elsässer Flammkuchen“ denkt – den es zwar auch gibt – soll sich überraschen lassen. Neben einer Auswahl an verschiedenen, selbstgemachten Teigen (Dinkel-Sauerteig, Roggen-Malz-Teig), gibt es eine Anzahl an spannenden Belägen, die den Flammkuchen zu dem machen, was er für Angelsachsen ist: „The French/German (or even better) Pizza“. Darüber hinaus bilden Rissole/Teigtaschen einen weiteren Schwerpunkt der Küche. Der Franzose nennt sie Ravioli, der Schwabe Maultasche, der Italiener nennt sie Ravioli, der Pole Pierogi und in Römischen Epoche nannte man sie Rissole oder eben Teigtaschen.
